The Mac Chef Series 8 in. (200mm) Fillet Knife made of high quality AUS-8 steel is a higher carbon steel than used in most boning knives, allowing for better edge retention. However the AUS steel can still be honed with a steel honing rod making this a very practical knife for professionals. Made in Japan.
